Well it's Spring but it's still hot soup weather here in Portland so I thought I'd offer an easy recipe for drop dumplings.
Make any kind of soup you like and once it's ready and simmering, make and add the dumplings.
Besides being comforting and delicious, they'll thicken and enhance the broth of your soup making it so much better.
Drop Dumplings
1 1/2 cups flour
2 teaspoons baking powder
3/4 teaspoon salt
3 tablespoons shortening
3/4 cup milk
Sift together flour, baking powder and salt. Cut in the shorting. Add milk stirring only until blended.
Drop by tablespoons into simmering hot soup. Cook 10 minutes uncovered and then cook 10 minutes covered.
