Breakfast For Lunch

At the Wednesday Community Meal yesterday at Trinity Episcopal Cathedral, we served 188. It was the first time in months that we served under 200 guests. Our lower number reflects the fact that it was the first Wednesday of the month and the weather is changing. Summer has always been our busiest time of the year.

We surprised our guests with breakfast for lunch which is always popular. We served a frittata filled with roasted potatoes, onions, red pepper, chopped kale and shredded cheese. Accompanying the frittata were golden pancakes, hot off the griddle thanks to our ace volunteer Jeff.

The guests loved the pancakes. Dining room volunteer Margaret went table to table with a platter of extra pancakes in case they wanted more.
