Chocolate Sheetcake

I needed to make a super-sized dessert to serve at the Wednesday Community Meal tomorrow and so I created this moist chocolate sheetcake. I love making sheetcakes because they come together quickly and because you serve them right from the pan, they are a breeze to frost since they require just a top coat.

I made a double batch of the recipe for my extra large 13 x 19 -pan and after the cake cooled, frosted it with buttercream that will be very hard to recreate.  I had some raspberry and salted caramel buttercreams in my freezer left over from making macarons, so I added to those to a package of cream cheese, a stick of unsalted butter, vanilla, a cup of cocoa powder and 1/2 cup of powdered sugar and whipped it until it was smooth and creamy. My nephew who is my official taste tester said "oh, that's gooood," when he took a taste.

It's fun getting creative and using leftovers to make something special. And really, just about any frosting would be great with this easy cake.

Here's the recipe:

Chocolate Sheetcake 
1 1/2 cups boiling water
3/4 cocoa powder
2 teaspoons espresso powder
2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon sea salt
3/4 cup unsalted butter, room temperature
3/4 cup brown sugar, lightly packed
1 cup granulated sugar
2 1/2 teaspoons vanilla
3 large eggs

Grease and flour a 11 x 17 baking pan and preheat the oven to 350 degrees. In a medium-sized bowl, whisk together the water, cocoa powder and espresso powder until smooth. Set aside to cool to room temperature.

In another medium-sized bowl, combine the flour, baking soda, baking powder and sea salt and set aside.

In a stand mixer, whip together the butter, sugars and vanilla until smooth and creamy. Add the eggs, one at a time, and whip after each addition until the mixture is smooth and well-combined.

Alternately add the flour and cocoa/water mixture in three additions, beating after each on low speed until blended.

Pour the batter into the prepared baking pan and bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.

Let the cake cool completely in the pan before frosting. Enjoy!

Guinness Chocolate Cake With Peanut Butter Filling

What's better than a Guinness Chocolate Cake? Two Guinness Chocolate Cakes with Peanut Butter Filling!

Hands down, my most requested cake is Chocolate Cake With Peanut Butter Filling and Chocolate Buttercream but sometimes it's fun to experiment and mix things up a bit. So staying with the peanut butter and chocolate theme I instead made two Guinness Chocolate Cakes and topped each of them with Peanut Butter Filling and Cream Cheese Icing.

I just thought the smooth lightly sweet icing would go really well with the chunky peanut butter filling. And, there really is no cake better than super moist Guinness chocolate.

When it came to decorating, I kept the sides of the cakes bare since I like the look of the bright white cream cheese icing against the dark chocolate brown cake. For a little extra pizazz I piped borders around the top, middle and base of the cake. The border also hides the not so pretty edges of where the peanut butter filling and icing meet.

I'm serving this cake tomorrow at the Wednesday Community Meal in recognition of our volunteers who have November birthdays and I hope it's a hit.

Here's how I made it:

Guinness Chocolate Cake
(makes two 9-inch cakes)

2 cup Guinness
2 sticks plus 4 tablespoons unsalted butter
1 1/2 cups cocoa powder
4 cups granulated sugar
1 1/2 cups sour cream
4 eggs
2 tablespoons vanilla
4 cups all-purpose flour
5 teaspoons baking soda

Preheat the oven to 350 degrees and butter and line two 9-inch springform pans.

Pour the Guinness into a large saucepan, add the butter in slices and heat until the butter is melted. Turn off the heat and whisk in the cocoa and sugar. Beat the sour cream with the eggs and vanilla and pour into the beer mixture and finally whisk in the flour and baking soda.

Divide the cake batter among the two greased and lined pans and bake the cakes for 45 minutes to 1 hour. Leave them to cool completely in the pan on a cooling rack before releasing them from the pan.

Once the cakes are cool, make the filling and cream cheese icing.

Peanut Butter Filling:
1 1/2 cup chunky peanut butter
1/4 cup butter, room temperature
2/3 cup powdered sugar
1 tablespoon vanilla
1/3 cup milk

In a mixing bowl, whip peanut butter and butter together. Add vanilla and powdered sugar and beat until smooth. Finally add milk and beat just until the filling comes together and is spreadable. Don't over beat.

Cream Cheese Topping
2 packages (8 oz) cream cheese, room temperature
1 1/4 cups powdered sugar
1 cup heavy cream

Whip the cream cheese until smooth. Add powdered sugar and whip again. Add the cream and whip again until it's light and spreadable.

To Assemble:
Place one of the cakes on a platter and top with half of the filling.

Spread the filling evenly over the cake being careful not to get too close to the sides.


Add a little more than a third of the icing to the top of the filling and spread it evenly, trying your best to keep it neat and the layers separate.


Top the first cake with the second cake and repeat, adding filling and cream cheese icing to the top.

Put the remaining icing into a pastry bag fitted with the tip of your choice and pipe a border around the top of the cake.

Also add a border around the middle of the cake. This hides the messy edge of where the filling meets the icing.

Finally, add a third border to the base of the cake. Keep the cake chilled until you are ready to serve. Enjoy!

Last Minute Valentine Treat

It's still not too late to whip up a sweet treat for your Valentine because this delicious Chocolate Guinness Cake topped with Easy Fluffy Frosting comes together lickety split.

Add some pretty stemmed Maraschino Cherries to the top and you'll have a Valentine treat that looks like something you've been planning for weeks.

How big you make the cake is your choice. You can make two of the cakes for a layered look like in the photo above or just one - both look beautiful.

Chocolate Guinness Cake

Easy Fluffy Frosting
1 egg white
1/4 teaspoon cream of tartar
3/4 cup granulated sugar
1 teaspoon vanilla
1/4 cup boiling water

Mix all the ingredients except the water in a deep mixing bowl. Add the boiling water and beat until stiff.

Big Birthday Cake

We celebrated two volunteer birthdays at the Wednesday Community Meal today — Happy Birthday Jay and Suzanne!

When it comes to making one cake for a large group this buttermilk chocolate cake with Swiss meringue buttercream is the perfect choice.

Just look at that big stack of plates and forks!

The cake recipe is one I've featured before. It's the "Greatest and Easiest Chocolate Cake" recipe featured on the box of Trader Joe's cocoa powder and it is indeed great and easy.

The Swiss Meringue Buttercream recipe is from Julie Richardson of Baker & Spice Bakery here in Portland (6330 Southwest Capitol Highway). This buttercream is lightly sweet and spreads like a dream.

"Greatest and Easiest Chocolate Cake"
3 1/3 cups flour
1 1/3 cups cocoa powder
3 cups sugar
1 tablespoon baking soda
1 teaspoons salt
12 ounces butter 
3 cups buttermilk
1 teaspoon vanilla 
5 eggs
Preheat oven to 350 degrees. Grease and flour two 9-inch round baking pans. (Note: For my cake, I used 2 round 8-inch pans that were 4 inches deep.)
Place all ingredients in electric mixer bowl and beat on high speed for 3 minutes, scraping down sides of bowl once during mixing. Pour into prepared pans. Bake cakes for about 55 minutes or until toothpick comes out clean.

Swiss Meringue Buttercream
6 large egg whites
1 1/4  cups granulated sugar
1/8 teaspoon cream of tartar
2 cups unsalted butter, room temperature
2 teaspoon vanilla
1/8 teaspoon of fine sea salt
1 tablespoon espresso powder, dissolved in 2 teaspoons hot water.
Place the whites in a clean mixing bowl. Whisk in sugar and cream of tartar.

Place bowl over a double boiler on medium heat, stir frequently until the mixture is very hot (120 to 130 degrees Fahrenheit).

Move to mixer and whip whites on high for 2 to 3 minutes; turn down to medium low until cool (use the bowl as your guide).

In a separate bowl with a wooden spoon, stir butter to soften.

With mixer on medium/high speed, add the butter one tablespoon at a time, adding the next tablespoon just as the previous one is blended in. Once all the butter incorporated, add in vanilla, salt and coffee and whip on high speed until fluffy.

A Cake For Everyone

I'm throwing a last minute small surprise birthday party for my niece Maya so I turned to my recipe for vegan chocolate cake because it will please everyone on my guest list.

The birthday girl's mom is a vegan and who wants to make two cakes for a party?

I've already posted this great recipe (see my June 5, 2012 post) but I just can't emphasize enough how easy and foolproof this cake is.

And, if you are nervous about frosting and removing cakes from a pan this is the recipe for you because you serve it in the pan you bake it in and you just pour a glaze on top.

A few colorful sprinkles add a festive touch.


Vegan Chocolate Cake

Cake Ingredients
2 1/2 cups flour
2 cup sugar
2/3 cup unsweetened cocoa powder
2 tsp baking soda
1 tsp salt
2 cup warm water
2 tsp vanilla extract
2/3 cup vegetable oil
2 tsp distilled white or apple cider vinegar

Chocolate Glaze

1 cup sugar
1/2 cup margarine
4 tbsp soy milk
4 tbsp unsweetened cocoa powder
4 tsp vanilla extract

Preheat the oven to 350 degrees. Grease a 9x13 baking dish.  In a large bowl, mix together flour, sugar, cocoa, baking soda, and salt. Add the water, vanilla, oil, and vinegar, and mix well. Pour into the baking dish and bake for about 30 minutes, or until a knife comes out clean. Cool on a rack completely (2 hours).

For the glaze, in a saucepan, bring sugar, margarine, milk, and cocoa to a boil. Stir frequently; then reduce heat to a simmer for 2 minutes, stirring constantly. Remove from heat and stir for another 5 minutes.

Bring the glaze to a boil and simmer for 2 minutes.
After the cake has cooled completely, pour on the glaze.


Add vanilla, stir, and immediately pour over cake. The glaze dries quickly so spread it immediately and add any sprinkles now. Let the cake cool for at least an hour before serving.           
Colorful sprinkles add a nice touch.

The Quickest Chocolate Cake



I just couldn't resist trying chef Michael Symon's recipe for Chocolate 'Cup' Cake.

I found the recipe in the June 18, 2012 issue of "People" magazine and if it wasn't from great chef Michael Symon, I would think it would be too good to be true — You mix up an easy cake batter, divide it among four coffee mugs and zap them in the microwave for three minutes.

I tested the recipe and it works. The cake is moist, rich and satisfying. This is one handy recipe that I will definitely keep on file.

Here's how you do it:

Put 8 oz. of butter and 8 oz. of chopped dark chocolate in a microwave safe bowl.



Microwave the chocolate and butter for 1 minute on the highest setting. Stir until melted.
In another bowl, combine 3/4 cup sugar, 3/4 cup flour, 4 eggs, 1 teaspoon sea salt and 1 teaspoon orange zest.
Whisk these ingredients together.

Add chocolate mixture.
Mix well.

Divide mixture among four 10 oz. coffee mugs.
Place all the mugs in the microwave and cook for 3 minutes on the highest setting. Let cool 30 seconds after baking.
Garnish with whipped cream and shaved chocolate.Enjoy!

Guinness Chocolate Cake



 I needed a last minute dessert to bring to a dinner party tonight so I turned to my favorite fail-proof Guinness Chocolate Cake. The cake comes together lickety-split — You mix it by hand in one bowl!

Today I substituted plain non-fat yogurt for the sour cream in the original recipe because I didn't feel like running to the store and it worked. The cake still came out moist and delicious.

The original recipe is from Nigella Lawson's cookbook "Feast." Try it and you won't be disappointed.

Guinness Chocolate Cake
1 cup Guinness
1 stick plus 2 tablespoons unsalted butter
3/4 cup cocoa powder
2 cups granulated sugar
3/4 cup sour cream ( or substitute plain yogurt)
2 eggs
1 tablespoon vanilla
2 cups all-purpose flour
2 1/2 teaspoons baking soda

Preheat the oven to 350 degrees and butter and line a 9-inch springform pan.

Pour the Guinness into a large saucepan, add the butter in slices and heat until the butter is melted. Turn off the heat and whisk in the cocoa and sugar. Beat the sour cream with the eggs and vanilla and pour into the beer mixture and finally whisk in the flour and baking soda.

Pour the cake batter into the greased and lined pan and bake for 45 minutes to 1 hour. Leave to cool completely in the pan on a cooling rack, as it is quite a damp cake.

Once cool, frost with Cream Cheese Topping.

Cream Cheese Topping
1 package (8 oz) cream cheese, room temperature
1 1/4 cups powdered sugar
1/2 cup heavy cream

Whip the cream cheese until smooth. Add powdered sugar and whip again. Add the cream and whip again until it's light and spreadable. Frost just the top of the cake so that it resembles a frothy top of Guinness.

A Simple Cake

A simple cake can make a big impression.

When I want to "wow" without fussy details, I turn to a moist chocolate cake with fluffy white frosting.

This is the cake I made for my daughter Eleanor's birthday party because it's special and easy at the same time. So when you need a cake but have other things to worry about, make this cake.

My favorite cake recipe comes courtesy of Nigella Lawson. It's "Guinness Chocolate Cake" and it's moist, rich and foolproof. The best part is that it comes together in one pot and is mixed by hand. Easy easy easy.

I made two cakes for Eleanor's party but one layer topped with icing and maraschino cherries looks just as nice.

Chocolate Guinness Cake
